  1. Get 50 poories or golgappa (homemade or ready made)
  2. Take 4 medium size mashed peeled boiled potatoes
  3. Prepare 1 cup boiled sprouts moong
  4. Make ready 1/2 cup sev
  5. Take 1 medium size finely chopped onion(optional)
  6. Get 1/4 cup -tamarind dates sweet chutney (optional)
  7. Prepare For pani :
  8. Get 1/2 cup mint leaves
  9. Get 1/2 cup coriander leaves
  10. Take 1 inch ginger
  11. Make ready 1-2 green chillies
  12. Prepare 1/2 tsp cumin seeds
  13. Prepare 1 tsp chat masala
  14. Make ready 1 tsp pani puri masala
  15. Make ready 1 tsp black salt
  16. Make ready 1 lemon juice
  17. Get 4 cup water
  18. Make ready 1/4 cup boondi (optional)

Steps to make Pani Puri:
  1. Rinse coriander leaves, mint leaves and green chillies.
  2. Add all ingredients of pani except boondi and water in the small jar of grinder.
  3. Grind until smooth paste. Add 1/4 th cup water if needed.
  4. Transfer it to the large bowl. Add water and mix it properly.
  5. Pani is ready. Place it in the refrigerator at least for 1 hour. Serve chilled. Add some boondi while serving.
  6. Take mashed potatoes in a bowl. Add cumin seed powder, coriander seed powder, red chilli powder and black salt.mix well. Add fine sev to it.
  7. Take boiled moong in a bowl. Add salt and mix well. Instead of moong you can used boiled chana or ragda.
  8. Take puri and make hole on it's top. Stuff with mashed potatoes, boiled moong, sweet chutney (if required). Take pani puri water in a large bowl and dip stuff puri in it and enjoy the pani puri.
