  1. Prepare 2 lbs pork belly, cut into strips
  2. Take 3 cups coconut milk
  3. Make ready 1 medium onion, minced
  4. Make ready 6 cloves garlic, minced
  5. Get 3 tbsp ginger, minced
  6. Get 1/2 cup shrimp paste (bagoong)
  7. Make ready 6 thai chili peppers or serrano pepper
  8. Get 2 tbsp cooking oil
  9. Take to taste Salt & pepper

Instructions to make Bicol Express:
  1. Take a wide pot or wok and heat cooking oil
  2. Saute garlic, onion, & ginger
  3. Add pork and continue cooking for 5-7 minutes or until the color becomes light brown
  4. Add shrimp paste (bagoong) and Thai chili or serrano pepper and stir
  5. Pour coconut milk and bring to boil. Simmer for 40 minutes or until the pork is tender
  6. Season with salt & pepper to taste
  7. Serve hot and enjoy!
