The ingredients needed to make Bicol Express:
  1. Prepare 1 kilo pork belly
  2. Prepare 4 cloves garlic (minced)
  3. Take 1 red onion (sliced)
  4. Take 2 tomatoes (sliced)
  5. Take 4 cups coconut milk
  6. Get 1 cup coconut cream
  7. Take 3 tbsp. Shrimp paste
  8. Get 1 Red chilli pepper (sliced)
  9. Make ready 3 Finger chilli (sliced)
  10. Get to taste Salt & pepper

Bicol express is also very easy to make. Bicol express is a spicy Filipino stew consisting of bite sized pieces of pork with chilies, coconut milk, shrimp paste (bagoong), onions, tomato and garlic. The dish is named after the train in the Bicol region of the Philippines, known for its spicy food. Bicol Express is a popular Filipino dish in which the slices of pork meat is cooked with coconut milk, shrimp paste, and chili pepper.

Instructions to make Bicol Express:
  1. Heat the pan. Put the pork belly and wait for it's water to drain out and it's oil to come out. Make sure the pork has a light brown colour.
  2. Remove the pork from the pan, but leave it's oil.
  3. Using the oil, put the onion for 20 seconds, then the garlic for 15 seconds. Put the tomatoes after.
  4. Put back the pork belly, then put the coconut milk. Also, put the shrimp paste. Simmer for 10 to 15 minutes.
  5. Put the red chilli pepper, then simmer for 5 minutes.
  6. Put the coconut cream, then simmer for 5 minutes.
  7. Put the finger chilli, then simmer for 5 minutes.
  8. Uncover the pan and let the coconut milk evaporate until the sauce thickens. The thickness of the sauce depends on how you want it served.
  9. If it's too bland, add salt and pepper. You might also add shrimp paste to help. If it's not that spicy, put more chilli.
  10. Serve it with rice and a glass of coca-cola. 😊
