The ingredients needed to make Mirliton (Chayote) and Sausage:
  1. Get 3 Mirliton (Chayote)
  2. Prepare 3 cups rice cooked
  3. Take 2 lb sausage
  4. Get 2 sticks Butter
  5. Prepare 1 large onion
  6. Take 2 cans Stewed tomatoes
  7. Get Paprika
  8. Get Dried parsley
  9. Get Creole seasoning

Increase bread crumbs for a mirliton dressing. While mirlitons are cooking, heat a large skillet over medium-high heat. Add the sausage, onions, bell peppers, garlic, Essence and salt. Bring a large pot of water to a boil.

Instructions to make Mirliton (Chayote) and Sausage:
  1. Cut mirliton in half and remove seeds, boil for 30 minutes. Cook 3 cups rice as usual.
  2. Slice and brown sausage in a large Texas sized skillet. Remove sausage toss in 2 sticks butter.
  3. Slice onions long and toss in hot butter. Peel mirliton and cut into bite sized cubes, add to skillet. Saute for about 10 minutes until onions and mirliton are soft.
  4. Knife through the cans if Stewed tomatoes to make them a bit smaller. Add Stewed tomatoes, cooked rice and sausage to skillet, add seasonings to taste, mix, cover and simmer for about 8 minutes.

Add the sausage, onions, bell peppers, garlic, Essence and salt. Bring a large pot of water to a boil. Remove from the heat, drain, and set aside to cool completely. Dice chayote squash leaving skin and soft seeds intact. Finely chop parsley, sage, rosemary and thyme.
