  2. Take 1 cup water
  3. Make ready 1 cup Minute Rice
  4. Take dash salt
  5. Prepare 1 tsp butter
  6. Get 1/2 tsp dried parsley
  7. Get pinch cayenne pepper powder
  8. Get 1/2 tsp concentrated lemon juice
  9. Prepare Eggs
  10. Prepare 4 eggs
  11. Get 2 tbsp milk
  12. Prepare dash cayenne pepper powder

  14. Take 1 tbsp olive oil
  15. Make ready 1 red bell pepper
  16. Make ready 1 small onion, chopped
  17. Take 1 clove garlic

HEAT oil in ovenproof skillet set over medium heat. STIR in black beans and corn until well coated. Whisk together the eggs, cumin, garlic salt, and pepper and set aside. Add the egg mixture to the skillet and cook, stirring, until the eggs are nearly done.

Steps to make Black Bean, Eggs and Rice Dinner:
  1. Add water, dash of salt, and butter to a small pot and bring to a rolling boil. Turn burner off, add rice, cover and let sit until water is absorbed.
  2. Once water is absorbed, add parsley, cayenne pepper, and lemon juice then fluff with fork. Set aside.
  3. Dice red bell pepper, and onion. Mince garlic. If you don't have a mincer, finely chop the garlic.
  4. Drain and rinse can of black beans and set aside.
  5. Carefully crack 4 eggs into a medium sized bowl. Add milk, and cayenne pepper then whisk until thoroughly mixed. Set aside.
  6. In large frying pan or sauce pan, heat the olive oil on medium to medium low heat. Once heated, add peppers and onion and cook until the onions are translucent, about 5 minutes. Add garlic and cook for another 30 seconds before adding the eggs.
  7. Let the eggs sit until they start to set a little and then stir. Repeat until the eggs are cooked. Add cooked rice, rinsed black beans, can of tomato soup, BBQ sauce, basil, and parsley. Stir until well mixed. Cook for roughly 10 minutes to allow ingredients to mix and heat. Serve alone or on toast.

Whisk together the eggs, cumin, garlic salt, and pepper and set aside. Add the egg mixture to the skillet and cook, stirring, until the eggs are nearly done. Once it's all cooked through, pile it into a tortilla and roll it up. It makes for a very delicious and hearty breakfast on the go! Oh, and you can send this dish to school with your kids.
