The ingredients needed to make Golgappa:
  1. Make ready For making gol gappa :
  2. Take 1/2 bowl Semolina
  3. Prepare 1/4 bowl Maida or all purpose flour
  4. Get 1/2 bowl Water
  5. Get To taste Salt
  6. Take 1 tbsp cooking oil for moyan
  7. Make ready As required Cooking Oil for deep frying
  8. Prepare For tamarind water :
  9. Take 1 lemon size ball of tamarind
  10. Make ready 1/4 tsp Black salt
  11. Make ready 1/4 tsp Salt
  12. Prepare 1/4 tsp Roasted cumin seeds powder
  13. Get To taste Red chilli powder
  14. Make ready 1/2 tsp Mango powder
  15. Take 2 tbsp Raita boondi
  16. Get 1 tbsp chopped coriander leaves
  17. Prepare 2 glasses water
  18. Prepare For filling :

  20. Get 1/2 bowl boiled potatoes, cut in small pieces
  21. Make ready As per taste Red tamarind sounth

Golgappa is a puff-pastry ball that's filled with mashed potatoes and chickpeas along with spicy mint/cilantro water, and sweet chutney. Steps to make Golgappa:
  1. For making golgappa: Mix semolina, maida, salad and oil for moyan in a mixing bowl. Mix it very well. Now make a dough by adding warm water. Knead it well and keep it aside for 15 minutes.
  2. Heat oil in a kadhai. Keep it on a low flame. Make a ball and roll it. Take a small-sized lid and place it on chapati and then press it. This way you will get a little sized golgappa and deep fry it. Press it gently with the help of spatula so that it gets puffed. Likewise, make all the gol gappa.
  3. For making golgappa pani: Boil lemon sized tamarind ball in 1/2 glass water. Cool it. Mash it and sieve the tamarind water. Now add black salt, salt, roasted cumin seeds powder, mango powder, red chilli powder and mix well. Golgappa Water is ready.
  4. Garnish water with boondi raita and coriander leaves.
  5. Now take golgappa. Make a whole in the centre. Put boiled potato pieces and chickpea. Add sone sounth and serve with one bowl of golgappa water.
