Curtido is a salad made out of cabbage and served with El Salvadoran pupusas. Stuff cooked pupusas with the curtido for a delicious treat! Nothing different from the original recipe except that it involves a lot of veggies. Using a hand-grater or the grater attachment of your food processor, shred cabbage, carrots and onion.

The ingredients needed to make Complete Salad Curtido…:
  1. Take 2 red onions ; thinly sliced
  2. Take 2 tomatoes ; thinly sliced
  3. Get 1 large cucumber ; thinly sliced
  4. Take 1 capsicum ; thinly sliced
  5. Prepare 1 small bunch of lettuce ; thinly sliced
  6. Make ready 2 tbsp coriander or cilantro ; chopped
  7. Make ready 1 tsp salt
  8. Take 1 tbsp olive oil

Drain in a colander, pressing out as much liquid as possible. Return the cabbage to the bowl and toss with the remaining of the ingredients. Toss cabbage, carrots, onion, chiles, garlic, oregano, and salt in a large bowl. Combine the cabbage, carrot, onion, and jalapeno in a large bowl.

Steps to make Complete Salad Curtido…:
  1. Cut up all of the veggies into thin slices.
  2. In a separate bowl, add in the onions with salt. Cover and keep aside for 10 minutes.
  3. When done, add in the other veggies to your taste.
  4. Add in the oil and toss everything to ensure that it is well coated.
  5. Serve with any dish !

Toss cabbage, carrots, onion, chiles, garlic, oregano, and salt in a large bowl. Combine the cabbage, carrot, onion, and jalapeno in a large bowl. Combine the remaining ingredients in a separate bowl and whisk well to mix. Pour the dressing over the cabbage mixture and stir. Taste and add additional salt, if needed.
