  1. Make ready 1 tsp olive oil or butter
  2. Get 1 tbsp finely chopped garlic
  3. Make ready 1 finely chopped onion
  4. Make ready 1 tbsp finely chopped capsicum
  5. Prepare 1 tbsp finely chopped zuccini
  6. Take 1 tbsp finely chopped and blanched beans
  7. Prepare 1 tbsp finely chopped and blanched carrot
  8. Take 2 cups vegetables stock
  9. Take 2 tbsp raw macaroni pasta
  10. Take 1 cup freshly pureed tomatoes
  11. Prepare 2 tbsp tomato chilli sauce
  12. Make ready 2 tbsp boiled black eyed beans
  13. Take 1 tbsp grated processed cheese
  14. Take 1 tsp chopped coriander
  15. Take 1 tsp oregano
  16. Make ready 1/2 tsp italian seasoning

Steps to make Ministrone soup:
  1. Heat oil or butter in a pan and add garlic, saute for a minute
  2. Then add onion, saute for 2 minutes, on low heat
  3. Now add tomato puree and cook until the extra moisture evaporates
  4. Then add vegetables stock and mix well
  5. Add all the vegetables and macaroni, mix well
  6. Cook on low heat until the macaroni becomes soft and completely cooked
  7. Now add salt and black eyed beans
  8. Then add oregano, italian seasoning, chilli flakes and tomato chilli sauce, mix nicely
  9. Let it simmer for a minute, the soup is ready to serve
  10. Take it out in a serving bowl and garnish with grated cheese and chopped coriander
  11. You can have it as a full meal as it is full of vegetables and macaroni
