Instructions to make Cheesey Chorizo Broccoli fritters:
  1. mix wet ingredients in large bowl (save 2 tbsp olive oil), add dry ingredients. stir until batter forms. add chorizo, cheese, and broccoli. stir well. Let mixture sit in fridge minimum 30 minutes.
  2. preheat oven to 325. Add 2 tablespoons oil to frying pan on medium high heat.
  3. spoon mixture into frying pan to desired fritter size (I do about 2 tbsp size). fry until golden brown, 2-3 minutes a side. remove set on wire rack on baking sheet.
  4. once all batter is fried bakelowna on wire rack for 12 minutes. Until fully cooked through.
