The ingredients needed to make Bathua Saag With Pakora And Potato Curry:
  1. Get 4 bunch bhatua leaves
  2. Take 1 potato (chopped)
  3. Take For paste
  4. Make ready 2 : green chilli
  5. Prepare 4 garlic cloves
  6. Get 1 inch Ginger " grind it and make a fine paste
  7. Get For pakodas :
  8. Prepare 1/2 cup gram flour
  9. Prepare 1/2 tsp ajwain
  10. Take 1/2 tsp turmeric powder
  11. Prepare to taste Salt
  12. Make ready 1 tsp cumin powder
  13. Make ready 1 tsp red chilli powder
  14. Take 2 tbsp mustard oil

Steps to make Bathua Saag With Pakora And Potato Curry:
  1. Soak the leaves with salt and turmeric. Keep aside for half an hour. Wash twice or thrice till all the dirt goes off. Then chopped the leaves and keep aside.
  2. For pakodas : In a bowl combine gram flour, salt, ajwain, turmeric powder and water. Mix….properly like a pakoda batter. Heat refined oil in Kadai. Fry one spoonful batter one by one till it become golden brown in color. Once it is done. Transfer to a plate.
  3. In the same Kadai. Add pachphoron and 1 dry red chilli(1 tsp cumin seeds, 1 tsp fennel seeds, 1 tsp onion seeds, 1 tsp mustard seeds and 1 tsp meh I seeds) this is called panch phoron. Fry for few minutes. Add chopped potatoes fry it for few minutes. Add Turmeric powder, cumin powder, red chilli powder, 1 tsp green chilli, ginger, garlic paste. Fry for few minutes.
  4. Then add bhatua leaves. Cover and cook till the potatoes and leaves become tender. At last add pakoda. Cook for few minutes. Once it is done. Add coriander leaves. Once it is done.
  5. Transfer to a serving plate. Ready to serve….with phulkas and steam rice with mong dal.

Allow the pressure to release naturally. Once released, peel the skin and mash the potatoes and keep aside. Next make the dough for the parathas. Grind the saag, green coriander, green garlic and chillies together. Heat oil in a karahi and then pour the grounded saag,peas and salt together.
