The ingredients needed to make Punjabi kadhi with baked pakoras:
  1. Get For pakoras:
  2. Take 1 cup chopped spinach
  3. Prepare 1 medium onion, chopped
  4. Prepare 1/2 tsp garlic,finely chopped
  5. Take 1/2 tsp ginger, finely chopped
  6. Get 1 cup gramflour or besan
  7. Take 1/2 tsp cumin seeds, roasted and coarsely ground
  8. Take 1/2 tsp red chilli powder
  9. Make ready 1/2 tsp coriander seeds, coarsely ground
  10. Prepare 1/4 tsp carom seeds
  11. Get 1/2 tsp salt or as per taste
  12. Make ready 1/4 tsp asafoetida
  13. Get 1/5 cup water or as per requirement
  14. Get 1 tbsp oil
  15. Prepare For kadhi:
  16. Take 3/4 cup gramflour or besan, slightly roasted
  17. Get 2 1/2 cup Yoghurt
  18. Make ready 1 tsp red chilli powder
  19. Take 1 tsp turmeric powder
  20. Take 1 1/2 tsp salt or as per taste
  21. Make ready 5-6 cups water
  22. Make ready 1 tbsp clarified butter/ghee

  24. Prepare 1/4 tsp asafoetida
  25. Get 1 tsp mustard seeds
  26. Take 1/4 tsp Fenugreek seeds
  27. Prepare 1 tsp cumin seeds

Steps to make Punjabi kadhi with baked pakoras:
  1. For pakoras; in a bowl put all the ingredients for pakoras, except oil.
  2. Mix it properly, prepare a homogeneous mixture, the mixture should stick into balls with your hands,let the mixture sit for couple of minutes.
  3. Preheat the oven to 220°C for 15 minutes,lined a baking tray with butter paper,brush oil on it.
  4. Using a icecream scoop, place scoop of mixture on lined baking tray, give some space in between,spray some oil on the pakoras.
  5. Put it in the oven.
  6. Bake it at 220°C for 20-25 minutes or until golden brown.
  7. For kadhi; meanwhile prepare besan mixture first,in a bowl add gramflour, red chilli powder, turmeric powder, Yoghurt,salt,water,mix them well, keep aside.
  8. Heat pan on medium flame,add ghee, Fenugreek seeds, cumin seeds,dry whole red chilli, mustard seeds, asafoetida,let it sputter.
  9. Now add the besan mixture,let it cook for 8-9 minutes or till it thicken in desired consistency,stir it continuously.
  10. Add pakoras and cook it for a minute in low flame.
  11. For tempering,take a small pan,add ghee, cumin seeds in medium flame,let it sputter,add red chilli powder.
  12. Immediately add the mix on the kadhi.
  13. Serve hot with steamed basmati rice, enjoy.
