The ingredients needed to make Mexican Lasagna:
  1. Prepare 1 pound lean ground beef
  2. Get 1 (1 ounce) packet of taco seasoning
  3. Make ready 1 small onion, chopped
  4. Prepare 4 garlic cloves minced
  5. Make ready 2 jalapeños, seeded and chopped
  6. Prepare 1 tablespoon butter
  7. Get 1 teaspoon lime juice
  8. Prepare 1 teaspoon granulated sugar
  9. Take 15 ounce can of fire roasted tomatoes
  10. Take 3 tablespoons chopped fresh parsley
  11. Get 1 tablespoon fresh chopped oregano
  12. Get 18 (6 inch) corn tortillas
  13. Get 1 cup prepared salsa
  14. Get 6 cups shredded Mexican blend cheese
  15. Get For Garnish
  16. Make ready as needed Green onions, sliced
  17. Get To serve
  18. Make ready as needed Sour cream and salsa for serving

Cut the tortillas in half or quarters to make them easy to layer with. Build lasagna in layers of meat and beans, then tortillas, then cheese. Mexican Lasagna has delicious layers of taco seasoned ground beef, refried beans, flour tortillas, sour cream and cheese. One of my favorite Mexcican casseroles.

Instructions to make Mexican Lasagna:
  1. Preheat the oven to 350. Spray a 9 by 13 inch baking pan with non stick spray
  2. In a skillet heat butter add onion, garlic and jalapeño and soften
  3. Add ground beef and cook until browned
  4. Add taco seasoning, tomatoes with juices, lime and sugar cool until blemded
  5. Turn off heat and add in parsley and oregano
  6. Line the bottom of the prepared pan with 6 of the corn tortillas
  7. Spread half the meat miure
  8. Add 2 cups cheese evenly over meat
  9. Add 6 more tortillas
  10. Add remaing beef mixture
  11. Then 2 cupsmore cheese
  12. Add remaning 6 tortillas
  13. Then top with salsa and remaining cheese
  14. Top with green onions and bake 25 to 30 minutes until cheese melts
  15. Let sit 15 min before slicing. Offer sour cream and Salsa for serving
