  1. Make ready 1 lb ground beef
  2. Prepare 1 can olives
  3. Make ready 1 Taco seasoning
  4. Get 1 Taco sauce
  5. Take 1 Cheese
  6. Get 1 Corn tortillas

Add a tablespoon of cheese and roll the tortillas closed. Place the filled tortillas, seam-side down, on the prepared baking dish. Instructions to make Beef Enchiladas:
  1. Cook beef and taco seasoning; drain
  2. Add olives and some taco sauce, just enough to cover meat (I used LA Victoria green sauce but you can use whichever sauce you prefer)
  3. Put mixture in corn tortillas and roll each, lining a 13x9 inch pan (about 14 tortillas)
  4. Cover with more taco sauce and sprinkle with cheese
  5. Bake at 425°F for about 18 minutes or until cheese is golden
