The ingredients needed to make Enchilada Bake:
  1. Prepare 1 lb groud sausage
  2. Prepare 1 lb ground beef
  3. Take 1 cup corn
  4. Get 1/4 small onion diced
  5. Take 1 packages corn tortillas
  6. Make ready 2 can refried beans
  7. Make ready 4 cup Enchilada sauce
  8. Make ready 16 oz shredded cheddar cheese
  9. Prepare 2 tbsp taco seasoning

Evenly spoon remaining can of enchilada sauce onto tortillas. Garnish with sliced black olives and bell pepper curls, if desired. Assemble beef enchilada casserole as directed without baking. I hope your family loves it as much as we do.

Steps to make Enchilada Bake:
  1. Brown sausage, hamburger, and onion. Add corn and taco seasoning. Set aside.
  2. Mix refried beans with 1 cup enchilada sauce. Set aside.
  3. In a 9x11 pan coat bottom with 1/4 cup enchilada sauce.
  4. Make layer of tortillas in bottom of pan.
  5. Next add the hamburger mix as a layer.
  6. Next another layer of tortillas.
  7. Add a layer of enchilada sauce
  8. Layer the refried bean mix next.
  9. Then another layer of tortillas.
  10. Top with the remaining enchilada sauce and shredded cheese.
  11. Bake at 400° for 20 min or until cheese is bubbly.
  12. Serve with salsa and sour cream.
