The ingredients needed to make Turai aloo ki sabzi:
  1. Get 1 kg turai (ridge gourd)
  2. Get 2 onions sliced
  3. Take 1 tomato chopped
  4. Get 3 tbsp oil
  5. Prepare 1 tsp jeera( cumin)seeds
  6. Prepare 1/2 tsp methi dana(fenugreek seeds)
  7. Take 1 tbsp coriander powder
  8. Take 2 tsp Kashmiri chilli powder
  9. Prepare 1/2 tsp roasted jeera powder
  10. Prepare 1/4 tsp haldi(Turmeric) powder
  11. Take 1 potato cubed
  12. Make ready 1 spring curry leaves
  13. Take 1 tbsp chopped coriander leaves
  14. Prepare To taste Salt

Instructions to make Turai aloo ki sabzi:
  1. Wash and peel the turai and chop it finely & keep it in a bowl. Peel and cut the potato into cube and keep in water.
  2. Heat oil in a kadai add jeera and methi dana when methi turns golden add the sliced onions cook till translucent
  3. Add the turai and potatoes and stir it well on high flame do not add water as turai will release a lot of water cover and cook for 5 mins
  4. Then add coriander powder, haldi powder, jeera powder, kashmiri chilli powder,salt,tomato and curry leaves. Cover and cook on medium flame till it's semi dry. Garnish with chopped coriander leaves
