The ingredients needed to make Ridgegourd kootu/ Peerkanga kootu/ Turai sabzi:
  1. Get 500 grams Ridgegourd/ peerkanga
  2. Get 1/2 cup toor dhal
  3. Get 1/2 cup onions (chopped)
  4. Make ready 2-3 green chillies
  5. Take 1/2 tsp mustard seeds
  6. Take 1/4 tsp urad dhal
  7. Take 2 tsp chana dhal
  8. Make ready 2 spring curry leaves
  9. Make ready 1/4 tsp Turmeric powder
  10. Get 3 tbspn grated coconut
  11. Get To taste salt
  12. Prepare 2 tbspn oil

Peerakangai kootu / Peerkangai poricha kuzhambu/ Beerakaya kootu (In Telugu) / Ridge gourd kootu (in English) is an easy, one pot side dish for rice. This ridge gourd kootu goes well with vatha kuzhambu and Kara kuzhambu rice. But we love to eat this poricha kootu by mixing with plain rice adding ghee. Peerkangai (Ridge Gourd) Kootu is made by cooking the vegetable in the dal & coconut mixture.

Steps to make Ridgegourd kootu/ Peerkanga kootu/ Turai sabzi:
  1. Peel the ridge gourd well and cut into small pieces.
  2. Pressure cook toor dhal adding water for 1 or 2 whistles.
  3. Heat oil in a pan add mustard seeds after it cracks add urad dhal and chana dhal. Saute till colour changes.
  4. Now add onions, green chillies and curry leaves. Saute till golden brown.
  5. Add the ridge gourd, turmeric powder and salt. Mix well. Cover and cook 5 minutes without adding water(these vegetables releases a lot of water).
  6. Now add the cooked toor dhal. Mix well and cook till water is absorbed and has a semi gravy consistency.
  7. Add grated coconut and mix well.

But we love to eat this poricha kootu by mixing with plain rice adding ghee. Peerkangai (Ridge Gourd) Kootu is made by cooking the vegetable in the dal & coconut mixture. This is easy to make and also very tasty. It's rich in dietary fiber,so it's good to use this vegetable regularly in our regular diet. It just looks like it would be time consuming to prepare.
