The ingredients needed to make Turai Ka Salan:
  1. Get 2 Turai (Ridge Gourd), sliced
  2. Prepare 2 tbsp oil
  3. Get 1 tsp cumin seeds
  4. Prepare 1-2 fresh red chilies. slit
  5. Make ready 2 onions, chopped
  6. Prepare 1 tbsp ginger-garlic paste
  7. Take 1 tsp tomato paste / 1 tomato, chopped
  8. Prepare 1 tbsp coriander-cumin powder
  9. Prepare 1/2 tsp turmeric powder
  10. Get to taste salt
  11. Take 1 tsp red chilli powder
  12. Make ready 1 tsp garam masala powder
  13. Prepare 1 tbsp lime juice
  14. Make ready As needed coriander leaves, sliced lime and chopped onion to garnish

Fry the onion in the oil till brown. Mix all the ingredients together and add to the pot and stir till the tomato has become soft and the water has dried. Add the meat and cook again to let the water dry. Turai Ki Sabzi is a ridge gourd curry.

Steps to make Turai Ka Salan:
  1. Heat oil in a pan and temper with cumin seeds and slit chilies. Saute for a few seconds. Then add the onion and fry till they turn slightly brown in colour.
  2. Add the ginger-garlic paste, tomato paste & all the dry spices mixed with a little water. Saute till oil separates.
  3. Add the turai and mix well to combine. Fry for 2 minutes.
  4. Add 3/4 cup water. Cover and simmer on a low flame till dry and the turai is soft.
  5. When done, add lime juice and serve, garnished with lime, chopped onion & coriander leaves.
