The ingredients needed to make Turai ki sabzi:
  1. Take 1/2 kg turai
  2. Take 1 onion chopped
  3. Take 4 round red chillies
  4. Get 1/2 tsp cummin seeds
  5. Make ready 1/4 tsp haldi powder
  6. Prepare 1/2 tsp red chilli powder
  7. Get to taste Salt
  8. Make ready 1 tbsp ginger garlic paste

This exact same method can be used to make a curry with Sponge Gourd, called Gilki ki Subji in Hindi or with Zucchini, also called Courgette. However, the neutral taste of the Turai/Ridge Gourd absorbs all other flavors wonderfully and makes the dish yummy.   1. Heat oil in a pan.
  2. Fry cummin seeds oand round red chillies.
  3. Add onion and fry till golden brown.
  4. Add ginger garlic paste and cook for 1 min
