Turai Ki Sabzi is a ridge gourd curry. It is a wonderful curry made with ridge gourd which is called as 'turai' in hindi and this is a simple veg curry. It tastes really well and goes well with rice and rotis/chapathis as well. Turai Ki Sabzi is a North Indian recipe for stir-fried Chinese okra.

The ingredients needed to make Turai ki sabzi:
  1. Prepare 1/2 kg turai
  2. Take 1 normal size piaz cut ki hiey
  3. Get 2 tamater Katy huey
  4. Take 2 Hari mitch kati Huey
  5. Prepare 1 tea spoon kali mirch powder
  6. Get 1/2 tea spoon namak ya zarorat ke mutabik
  7. Take 1/2 tea spoon zeera ka powder
  8. Take 1 bari ilichi sabit
  9. Take 1/4 cup oil

This exact same method can be used to make a curry with Sponge Gourd, called Gilki ki Subji in Hindi or with Zucchini, also called Courgette. However, the neutral taste of the Turai/Ridge Gourd absorbs all other flavors wonderfully and makes the dish yummy. Turai is part of the cucumber family it is also called a Loffa in scientific language. There is a lot of names of this vegetable Turai Ki Sabzi (Turiya) in North India and Beerakaya Curry in South India, Gilki Ki Sabzi in Hindi.

  1. Pahly turai ke chilky utar kar turai ko patly gol pieces main kat lein
  2. Ab kisi patili main oil garamker ke bari ilichi dal dein ab piaz dal kar fry karein jub piaz ka rang golden hony lagy namak zeery ka powder dal kar bhon lein
  3. Ab tamater Hari mirch dal kar thak dein tamater narm ho jaein to kati Huey turai dal dein mix kar ke thak kar 10 sy 15 mint pakaein turai apna pani chor kar narm hp jaey to mash kary Huey bhon kali mirch dal dein jub oil alg hony lagy to turai ki sabzi ready roti ke sath pesh karein
