The ingredients needed to make Turai ki sabji:
  1. Get 500 gm Turai
  2. Prepare 1/2 tsp cumin seeds
  3. Prepare 1/4 Tsp mustard seeds
  4. Prepare 1 tomato puree
  5. Take 2 onion puree
  6. Take To taste salt
  7. Get 1/2 tsp red chilli powder
  8. Get To taste all regular spices
  9. Make ready As needed water
  10. Prepare As needed oil

The ridge gourd or turai is cooked in the tomato-based gravy to make this amazing dish. This is rich and flavourful curry. Most of the people don't like to eat Turai or ridge gourd. In north India ridge gourd curry is called Turai ki sabji and in Andhra we call it Beerakaya kura.

Steps to make Turai ki sabji:
  1. Take a pressure cooker heat the oil add cumin and mustard seeds. allow them to crackel after that add tomato and onion puree and sute it.
  2. Now add the all regular spices, red chilli powder,salt, water and turai and cook it.

Most of the people don't like to eat Turai or ridge gourd. In north India ridge gourd curry is called Turai ki sabji and in Andhra we call it Beerakaya kura. Traditionally ridge gourd curry uses onion, tomato and green chilly. Today I am using red chilly powder,garam masala and peanuts. Simple basic ingredients which are easily available at home, goes into making this sabji.
