The ingredients needed to make Jhinge diye Bhaja Muger Dal:
  1. Take 1/2 cup split green gram (moong dal), dry roasted & soaked for 30 minutes
  2. Take 2 cups Ridge gourd (turai) cut into roundels
  3. Prepare 1 tbsp. mustard oil
  4. Make ready 1-2 bay leaves
  5. Prepare 2 dry red chilies
  6. Prepare 1/2 tsp. panch phoron (equal quantities of fennel, fenugreek, mustard, cumin & nigella seeds)
  7. Get 1 " cinnamon stick
  8. Take 2 green cardamoms
  9. Get 4 cloves
  10. Make ready 1 tsp. ginger, grated
  11. Make ready to taste salt
  12. Get 1/2 tsp. turmeric powder
  13. Make ready 1-2 green chilies
  14. Prepare 1/2 tsp. roasted cumin powder
  15. Take 1 tsp. ghee (clarified butter)
  16. Get 2 tbsp. coriander leaves, chopped

I just did a tempering of ginger, bay leaves, whole garam masala and. The Sobji Diye Bhaja Muger Dal&nbsp;is delicately flavored with ghee and cumin to let the aroma of dry roasted yellow mung shine through. Instructions to make Jhinge diye Bhaja Muger Dal:
  1. Discard the peel partially and cut into roundels.
  2. Pressure cook the dal & the chopped turai in 1 cup water & turmeric powder for 4-5 whistles.
  3. Heat oil in a pan & temper with the bay leaf, red chilies, panch phoron, cinnamon, cardamoms and cloves. Allow it to splutter.
  4. Add the grated ginger & saute for a few seconds.
  5. Add the boiled dal, cumin powder, salt & green chilies. Simmer on a low flame for 2-3 minutes.
  6. When done, add ghee and coriander leaves.
  7. Serve with plain steamed rice for a great comfort meal.
